Health Benefits of Bitterroot

Bitterroot is a little perennial plant and is native to western North America. The plant grows in forest environments. It has several stems and its length is between 1 and 3 cm. A flower appears on each stem and has 10 to 19 petals. The color of the flower ranges from white to pink. Its flowering season happens from April to July. The plant produces 6 to 20 round seeds at maturity. The roots are fleshy and radiating. Native American tribes consumed the taproot for nutritional balance. It has a bitter taste. The bark has been removed and the roots are boiled or pit-roasted and can be consumed directly or dried it, ground it to powder and used.
